🌶️ Classic Ground Beef Stuffed Peppers

đź›’ Ingredients:

  • 1 lb Cunningham Pastured Meats ground beef
  • 4–6 large Organic bell peppers (any color) from Cliff’s Country Market
  • 1 cup cooked rice (white, brown, or cauliflower rice for low-carb)
  • 1 can (15 oz) diced tomatoes (drained slightly)
  • 1/2 cup onion, finely chopped (remember, organic veggies from Cliff’s are always the best!! )
  • 2 cloves garlic, minced
  • 1 tsp Italian seasoning (select just what you need from Cliff’s Bulk Spice Selection)
  • Salt & pepper to taste
  • 1 cup shredded cheddar or mozzarella cheese (or Sierra Nevada Raw Cheddar!)
  • Optional: chopped parsley for garnish

🔪 Instructions:

  1. Preheat oven to 375°F.
  2. Cut tops off bell peppers and remove seeds and membranes. Place upright in a baking dish.
  3. In a skillet, brown ground beef over medium heat with onions and garlic. Drain excess fat.
  4. Stir in cooked rice, diced tomatoes, seasoning, salt, and pepper. Simmer 5 minutes.
  5. Stuff peppers generously with beef mixture and top with shredded cheese.
  6. Cover with foil and bake for 30 minutes. Remove foil and bake an additional 10–15 minutes until cheese is golden and peppers are tender.
  7. Garnish with parsley and serve warm!
