
🌶️ Classic Ground Beef Stuffed Peppers

đź›’ Ingredients:
- 1 lb Cunningham Pastured Meats ground beef
- 4–6 large Organic bell peppers (any color) from Cliff’s Country Market
- 1 cup cooked rice (white, brown, or cauliflower rice for low-carb)
- 1 can (15 oz) diced tomatoes (drained slightly)
- 1/2 cup onion, finely chopped (remember, organic veggies from Cliff’s are always the best!! )
- 2 cloves garlic, minced
- 1 tsp Italian seasoning (select just what you need from Cliff’s Bulk Spice Selection)
- Salt & pepper to taste
- 1 cup shredded cheddar or mozzarella cheese (or Sierra Nevada Raw Cheddar!)
- Optional: chopped parsley for garnish
🔪 Instructions:
- Preheat oven to 375°F.
- Cut tops off bell peppers and remove seeds and membranes. Place upright in a baking dish.
- In a skillet, brown ground beef over medium heat with onions and garlic. Drain excess fat.
- Stir in cooked rice, diced tomatoes, seasoning, salt, and pepper. Simmer 5 minutes.
- Stuff peppers generously with beef mixture and top with shredded cheese.
- Cover with foil and bake for 30 minutes. Remove foil and bake an additional 10–15 minutes until cheese is golden and peppers are tender.
- Garnish with parsley and serve warm!
